We all love going to our Aunt Lynne’s or Uncle Wilson’s house over the holidays to eat their famous sweet potato pie or delicious slow-roasted potatoes with that tantalizingly sweet honey glaze.
Not only are sweet potatoes yummy, they come with some great health benefits. They are an excellent source of Vitamin C, which is good when fighting off colds and flu viruses and helps with tooth formation. But did you know that vitamin C also helps you when coping with stress? It can protect your body against cancer, too.
Sweet potatoes also contain vitamin D, which is vital to our immune system, energy levels, skin, teeth and nerves.
Lastly, they contain iron and are a great source of magnesium.
Below is a delicious slow-roasted sweet potato recipe that you can enjoy any time of year:
— 4 medium-sized sweet potatoes (or as many as needed)
— 4 tablespoons of butter (optional)
Place rack in center of oven and preheat to 350 degrees.
Scrub potatoes to remove dirt, then place on a foil-lined baking sheet. Bake for an hour.
Remove sweet potatoes from oven, flip them to the other side, and bake another hour.
At the two-hour mark, turn off the oven and keep the potatoes in oven for another hour. The extended baking time produces a very sweet-tasting potato, makes it easier to peel and leaves it caramelized.
